Hi everyone!!! I took a long vacation but I am back with tons of recipes to share with you! And to start off, here is something a little sweet for you guys!
I wanted to do a quick one bowl cookie that my kids would love. Now if your kids are anything like mine, they like pretty much anything that has chocolate chips in them and since I had loads of frozen bananas to unload, I decided to turn them into cookies instead of the traditional loaf. Now these are very soft cookies that will spread while baking so make sure you leave them a lot of space. If you wish for them to spread less, put them in the freezer for 10- 15 minutes or in the refrigerator for 30 minutes before baking. I used a big ice cream scoop to drop them on my baking sheet, but feel free to use a spoon. You want to make these extra-large and this recipe should yield about 20 cookies depending on the size. You can freeze them easily but mine were gone by the second day! With some yogurt, they served as breakfast for an easy weekend morning.
Start by mashing the bananas with the sugar. Add the eggs and vanilla and stir well. Whisk the flours, baking powder and salt together and add it to the bananas, stirring until just combined. Add chocolate chips of your choice (I used a combination of semi-sweet and white) along with the nut of your choice and stir just until they are distributed evenly. Scoop onto a parchment lined baking sheet by the dollop with an ice cream scoop or spoon and if you can resist, place them in the refrigerator for 30 minutes before baking, this will help them keep their shape.
While they are in the fridge, preheat the oven to 375°F. Cook them for 15 to 17 minutes until they are golden brown on the bottom and they bounce back when pressing your finger in the middle of the cookie. Try to let them cool before devouring.
- 4 bananas
- 3/4 cup of brown sugar (packed)
- 2 eggs
- 1 tsp of vanilla extract
- 1 cup of melted butter (cooled to room temperature)
- 2 cups of all-purpose unbleached flour
- 1 cup of toasted oats flour (or substitute for regular or whole wheat)
- 2 tsp of baking powder
- 1/2 tsp of salt
- 1 cup of chocolate chips
- 1 cup of chopped pecans
