This recipe is quite simple yet so versatile for the summer months, especially now that our fresh corn is out. This condiment can be served on it’s own beside a grilled steak, serve over tacos, grilled fish, as a salad with feta cheese, either way you will be won over by the refreshing taste of summer vegetables!
Preheat the grill on high heat. Toss the vegetables with canola oil, salt and pepper and grill until you have beautiful char marks on the vegetables. You want them to remain crunchy so this won’t take very long, about 2 to 3 minutes on each side. Remove from grill and let cool a few minutes.
Chop your vegetables, toss with remaining ingredients, adjust seasoning and serve! Feel free to add a little jalapeno (grilled or not) if you like it spicy.
- 4 ears of corn whole, husk removed
- 2 red bell peppers, cut in half, core removed
- 2-3 green onions, washed
- zest and juice of 1 lime
- 2 tbsp of olive oil
- 1 tsp of salt
- 1/2 tsp of fresh ground black pepper
- 1 jalapeno, seeds removed (optional)
