Québec’s beautiful strawberries are out and soooo delicious! I hate wasting food in the kitchen and so I try to utilize every scrap I can from soups to this one: syrup!
This is a simple recipe that enables you to stretch your dollar on those strawberries and have them due double duty. Wash your strawberries and keep the stems. You could even freeze them as you buy them throughout the season is you want to make a big batch all at once. If not, simply use the 3 to 1 ratio: 3 parts strawberry and water for 1 part of sugar.
In a pot put all the ingredients and bring to a boil. Close the heat and let steep for one hour. Pour into a sieve lined with a cheesecloth and mash with the back of the spoon in order maximize all those beautiful juices. Pour into your container of choice and refrigerate. Use in drinks or add a little sparkling water for a nice refreshing summer drinks with a sprig of basil, it is summer in a glass!
Use a ratio of 3 to 1
- 3 cups of water
- 3 cups of strawberry stems
- 1 cup of sugar
