I know, I know, I have not posted anything recent lately but I was away in the woods with no electricity and so I could not update you on all these amazing recipes I have come up with in the last weeks. The good news is that I wrote them all down! 🙂 So shall we start with a small one?
This quick pickled vegetable condiment is perfect with almost anything. Top your burgers, a grilled piece of chicken or pork, even a bowl of rice would be good with these. And so simple to do that this recipe can be completed in under 10 minutes.
In the bottom of a bowl or in a big Mason jar, simply layer the spices, onion, cabbage and then the zucchini. Add the water and vinegar and place the lid on tight if you are using a Mason jar. Give it a good shake or stir if you are using a bowl and let it rest 15 minutes or so while you are finishing up your dinner and serve.
- 1 cup of shredded red cabbage
- 1 cup of thinly sliced zucchini
- 1/2 of an onion thinly sliced
- 1 cup of boiled water
- 1 cup of white vinegar
- 1/2 tsp of cumin seeds
- 1/2 tsp of coriander seeds
- 1/2 tsp of fennel seeds
- 1/2 tsp of salt
- a few grinds of black pepper
