No-Bake Lime and Coconut Breakfast Bars


These breakfast bars or “just-the-perfect-kind-of-snack” bar as I like to call them, are not too sweet and with the perfect amount of crunch, they are terrific at any time of the day!  They are a bit fragile if they are not cold enough but since the only thing keeping them together is the nut butter, can you blame them? Don’t worry and just eat them over something so you can scoop up every last bit or if you wish to make them sturdier, replace the oil by butter.

Prepare a square pan with parchment paper with an overhang as to be able to lift up the bars later on.  Mix together the oats, coconut, chia seeds and bran cereal and set aside.
In a microwave safe bowl, heat for about 30 seconds to 1 minute the peanut butter with the oil until it is very fluid.  Stir the zest and juice of the lime into the nut butter mixture until fully combined, then add to the oat mixture until fully combined.  Spread the mixture into the bottom of the pan and using the back of a cold spoon, compact it as much as possible and set aside.  In a microwave safe bowl, melt the chocolate chips along with the 1/2 tsp of oil 30 seconds at a time, mixing in between until completely melted.  The oil is in there to make sure the chocolate turns out shiny.  Spread over the cereal bars and set in the fridge to chill for at least 4 hours.


  • 2 cups of one-minute oats
  • 1 cup of bran cereal
  • 1 cup of grated unsweetened coconut
  • 1 cup of peanut butter or other substitute
  • 1/4 cup of coconut oil or canola oil
  • 1 cup of semi-sweet or dark chocolate chips + 1/2 tsp of oil
  • 2 tbsp of chia seeds
  • Zest and juice of 1 lime
