Piri Piri Roasted Cauliflower and Peaches With Honey Garlic Roasted Salmon

This is a one sheet pan and 20 minutes later kind of meal which is more than perfect for a weekday meal on the fly.  On top of being healthy, it is bursting with flavor.  I’ve been on a kick with the piri piri spice mix lately but it is so versatile and quick to use that there is really no reason not to.

Preheat the oven to 450°F.  Place the cauliflower florets and sliced peaches on the baking sheet lined with parchment paper and drizzle with olive oil, sprinkle with the piri piri and add a pinch of salt.  Toss together and bake for 10 minutes.  Remove sheet pan from the oven and toss the veggies a little.  Place the salmon on the same sheet pan, sprinkle with salt and pepper, place garlic slivers on salmon and drizzle with honey and the olive oil.  Bake again for another 10 minutes or until the salmon is cooked to your liking.

Serve alongside a quick green salad and voilà: dinner is on the table in under 30 minutes!  You are welcome 🙂

Ingredients for 4 to 5 people

  • 1 cauliflower head broken up into florets
  • 2 peaches peel (optional) and sliced
  • 2 tbsp of olive oil
  • 1 tsp of salt
  • 1 to 2 tbsp of piri piri (up to taste)
  • Salmon (4 to 6 fillet or one whole piece)
  • Salt and pepper to taste
  • 1 clove of garlic sliced into 4 slivers
  • 1 tbsp of olive oil
  • 2 tbsp of honey
