Crock Pot No Fuss Coconut Milk Chicken

This was so easy to make and soooo delicious that you would never believe that no work was involved in this one.  A part from chopping an onion that is the extent of the work needed, the rest is simply to dump in the crock pot, give it a stir and let it cook.  I think this will break the record for the shortest post with the most amazing results! 🙂

In the crock pot, stir together the onions, flour, tomato paste and spices so that the flour is evenly distributed throughout.  Add the coconut milk and chicken and stir to coat.  Cook on high heat 4 to 5 hours. Serve over rice or noodles and steamed green vegetables such as broccoli or bok choy, cilantro or minced green onions.

Ingredients for 4 to 6 people

  • 1 package of about 12 chicken thighs deboned and skinless
  • 1 can of coconut milk
  • 1 medium onion minced
  • 1/4 cup of coconut flour (or all-purpose flour)
  • 2 tbsp of tomato paste
  • 1 tbsp of turmeric powder
  • 1 tbsp of ground garam masala
  • 1 tsp of salt
