Ultra Moist Chocolate and Zucchini Cake

This ultra moist cake, comes together very quickly in one bowl and will be gone as quickly…  My kids devoured it and did not hesitate to continue wolfing it down when I mentioned it was made with zucchinis so you can feel good about sneaking them those extra veggies.

Preheat the oven at 350°F and spray a 9×13 dish with cooking spray.  Combine the oil, sugar, yogurt, vanilla and egg together and stir until combined.  Sift in the dry ingredients (flour, cocoa powder, baking soda and salt) and stir just until combined.  Do not over mix it.  Add the grated zucchinis and gently fold in the batter.  Place in pan and cook in the middle of the oven for 45 to 55 minutes until a skewer inserted in the middles comes out clean.  Let cool before cutting.

Ingredients:

  • 1/2 cup of vegetable or canola oil
  • 1 cup of sugar
  • 1/2 cup of plain yogurt
  • 1 egg
  • 1 tbsp of vanilla extract
  • 2 cups of all purpose flour
  • 1/2 cup of cocoa powder
  • 1 1/2 tsp of baking soda
  • 1/4 tsp of salt
  • 2 medium zucchinis grated
