This is most definitely one of my most popular recipes! The perfect combination and ratio of spices makes this rub perfect on almost anything! Try it on chicken, pork chops, even on roasted vegetables such as cauliflower. So feel free to double up on the spice mix and keep it close by to add a little touch of casual chic to any meal!
Preheat the oven at 450°F or the BBQ on Medium heat. Mix all the spices together and rub all over the tenderloins. Try to leave it on at least 15 minutes at room temperature before cooking.
For the BBQ, cook turning every 5 minutes until temperature reaches 150°F (about 20 minutes or so) and let it rest loosely covered with foil for at least 10 minutes before carving.
For the oven, place on baking sheet over parchment paper or foil and cook until temperature reaches 150°F (about 20 minutes) and let it rest, loosely covered with foil, for at least 10 minutes before carving slices.
Serve with grilled vegetables, cauliflower purée, rice or a beautiful mango salsa as shown above.
- 2 pork tenderloins (silver skin removed)
- 2 tbsp brown sugar
- 2 tbsp of paprika
