Sweet and Salty Pumpkin Seeds

These are the PERFECT snack! Sweet, salty and a little kick from the chipotle makes you want to have more and more! Thankfully these are good for you!  Eat them as is, or top onto soups or salads.

Start by cleaning out your pumpkin and removing the seeds.  Rinse them out under cold water and make sure there is no more pumpkin strands to them.  Let them dry overnight on a clean kitchen towel or paper towel.

Preheat oven to 375°F.  Once they are dry, mix up with oil and spices and place on a baking sheet, trying to do one even layer.  Cook for 10 minutes and stir, returning them into one even layer.  Continue cooking until they are golden brown, about 5 to 10 minutes.

Ingredients for 1 to 1 1/2 cups of raw pumpkin seeds:

  • pumpkin seeds
  • 2 tsp of canola oil
  • 1 tsp of chili powder
  • 1 tsp of sugar
  • 1 tsp of salt
  • 1/2 tsp of smoked paprika
  • 1/4 tsp of chipotle powder
