Parmesan Cauliflower Purée

This is a decadent side to any meal.  Creamy, unctuous and just plain decadent!  If you think your kids won’t eat them you can always tell a little white lie and tell them it’s potatoes!  😉   The beauty of this purée is that you can get it all done in advance and just reheat when needed unlike mashed potatoes there’s no starch to deal with.

Cut your cauliflower in pieces and cook in chicken broth or salted water until you can easily prick a fork through them.  They need to be very soft in order to get a beautiful purée. Then in a food processor, place the cauliflower (without the chicken stock) along with the butter, cheese and roasted garlic and process till smooth.  Adjust seasoning and reserve until ready to use.

Ingredients:

  • 1 head of cauliflower (leaves removed but you can keep the stems)
  • 2 cups of chicken broth
  • 1 cup of grated Parmesan
  • 2 tbsp of unsalted butter
  • salt and pepper to taste
  • Chives for servings (optional)
