Curry and Maple Syrup Salmon

A rainy weekend calls for something colourful on your plate and salmon fits the bill perfectly. This dish has the advantage of satisfying the kids with the sweetness from the maple syrup and the curry pleases the adult palate, making it a win-win diner for everyone.

Sprinkle your salmon fillets with the curry powder and salt. Add the butter and oil to a large non-stick skillet and melt butter over medium heat. Once the butter is bubbling, add the salmon, skin side down and sear for about 5 to 10 minutes. Add the maple syrup to the pan over the fillets and continue to cook until the salmon is almost cooked through. Gently turn the salmon in the skillet in order to caramelized the top and cook until desired doneness.  The maple syrup will have thicken up and give you a nice thick sauce to drizzle over.  (If ever it becomes to thick, your heat might be too high or you can also add a little water or chicken stock to loosen it. Serve with your choice of veggies along with rice or couscous.


4 salmon fillets
1 tsp of salt
2 tsp of curry powder
1/2 cup of maple syrup
2 tbsp of butter
1 tbsp of olive oil
