Snap Peas and Apple Harissa Salad

This salad is as refreshing as it is nice to look at. Anybody that knows me, knows I love my heat, but harissa is a different kind of heat.  The base is a purée of a variety of peppers that are relatively mild and adds a ton of flavour. (When I say mild I really mean mild; even the love of my life and my kids who do not tolerate any type of heat did not mention anything except the word “YUM”).  It adds that little something to this salad that transforms it from OK to WOW!

In a salad bowl, combine the oil, vinegar, salt and harissa and whisk together. Toss in the remaining ingredients. Serve along any type of fish, grilled meats or this could also serve as a base for a beautiful salmon tartar by chopping the snap peas and apples into small cubes and mincing the green onions instead of matchsticks.

Ingredients:

  • 2 cups of snap peas (sliced into matchsticks -optional)
  • 1 green apple sliced into matchsticks
  • 2 green onions (white and green part) sliced on the diagonal or into matchsticks
  • 2 tbsp of rice vinegar
  • 2 tbsp of olive oil
  • 1/4 tsp of salt
  • harissa paste up to taste,  start by 1/4 tsp and taste and stop when your taste buds are happy
