Ahhhh spring! The return of refreshing recipes and trying to pack in as much good stuff as possible and trying to do so without any fat. Possible? Check and done! In this crunchy salad, the miso gives the umami flavour while the citrus keeps it light and refreshing. This salad is the perfect accompaniment to any BBQ recipes, a piece of fish or chicken breast and it would even be perfect in a sandwich!
Simply combine the vinaigrette ingredients (whisking in the miso to blend) and add the vegetables. Cilantro can be added last minute or omit completely if it’s not your thing (dill would also be terrific with this).
- Juice of one orange or 2 tbsp of orange juice
- Juice of 1/2 lemon
- Zest and juice of 1 lime
- 1 tbsp of miso paste
- 1 tbsp rice wine vinegar
- 1/4 tsp of siracha or more to taste (optional)
- 4 bell peppers (any color will do)
- 1/4 of a small onion or 1 shallot or 2 green onions
- 4 tbsp of cilantro
Feel free to use any vegetable you have on hand, as long as you get about 4 cups total.
