A cake with no oil or butter, done with simply a fork in the same pan it’ll be cooked in and to top it off comes out delicious and moist? Look no further! It took me less then 10 minutes to put together and was baking while we were enjoying our dinner, ready to be eaten still warm from the oven!
I needed to do some kind of cake for my kids as I need to feed them cooked eggs in order to eventually be able to say goodbye to the raw egg allergy remaining and I did not feel like getting out all of the “cake” gear, and then I saw the leftover buttermilk in the fridge and the fork cake was born!!
Preheat your oven at 350f. Start by whisking together the buttermilk, eggs, vanilla and sugar with a fork in a square baking pan. Sift in the flour, baking powder and salt until the flour is incorporated into the wet ingredients and sprinkle in the chocolate chips. Bake for about 30 minutes until the tip of a knife comes out clean. You can serve it while it is still warm from the oven.
1 cup of buttermilk (or 1 cup of milk with 1 tbsp of white vinegar)
1/2 cup of sugar
1 Tsp of vanilla
1/4 Tsp salt
1 tbsp of baking soda
1 1/2 cup of pastry flour
1/2 cup of chocolate chips and/or coconut flakes (or both) or anything else you have on hand
