Fish Tacos with Mango Salsa and Avocado Cream

Need  a way to feed fish to your kids? One way to achieve that goal is first to serve it in a vessel (bonus if it’s a crunchy one) and serve it with something they LOVE! For my kids that is mango and so the fish taco with mango salsa was born!!!
A simple, healthy and easy meal done in 30 minutes or less that your kids will actually eat and be asking for seconds? What more do you want out of your dinner?

Preheat the oven to 425 and place your fish (any white fish will do and yes it can come straight from the freezer!) on a baking sheet and sprinkle with chili powder (1 tbsp) and lime zest (1 lime).  Send the fish in the oven to cook while making the salsa (fish is cooked when you can flake it with a fork check after 10 minutes).

For the salsa, chop and toss in a bowl 1 mango, 2 cups of cherry tomatoes, 1 imageshallot, juice of 1 lime, salt and pepper to taste.

For the avocado cream, simply blend an avocado with some lime juice until smooth (you may add 2 tbsp of plain yogourt or buttermilk to the avocado to add creaminess if you wish).

All that is left to do is assemble and EAT!

imageTip : add the avocado cream in the bottom of the shell in order to coat both sides then add your spice of choice if you do decide to go hot (siracha was mine for these tacos) that way you get a little bit of everything in each bite.

Finish them off with a little lettuce and some fresh coriander!
