Broccoli, Kale, Parmesan and Lemon Pesto


My first recipe is easy, done in no time, healthy, kid approved and even hubby approved and to top it off, it is packed with flavor!!! I promise that future post will have step by step pictures to make it even easier! I’m not even going to give quantities here because it is up to your taste buds to decide. Taste as you go along is my first rule in the kitchen!

Start by bringing to a boil some heavily salted water and add broccoli and kale. Cook until they are almost over cooked. You want them very soft. Drain and keep about a cup of the cooking liquid. Next choose your tool of choice to achieve your concoction! Using either a hand held blender, blender or food processor, purée the broccoli and kale with the zest of one lemon and juice of half (adding more to taste). You may leave it as chunky as you wish. Once you’ve attained the desired consistency, add about a cup of grated Parmesan (use the good stuff here you will taste the difference) or more to taste. Finish it off with some salt and pepper to taste and top the finish product on pasta, over chicken or fish, it will also be just as delicious on a piece of toast!!!

  • 1 box of pasta any kind will do
  • broccoli
  • kale any kind will do, simply remove the stalks
  • parmesan
  • salt & pepper
  • zest and juice of a lemon
